Ingredients:

1 diced onion
1 pepper ( any colour ) chopped
2garlic cloves finely chopped
1 grated carrot
1 celery stick thinly sliced
Use any veg you have
2 tins of beans ( pinto , borlotti
kidney , butter , baked )
1 tin chopped tomatoes
1 tblspn tomato purée
1/2 cinnamon stick
Dash of cumin , 1 tblspn oregano
1 red chilli ( use as much as you like ) or use dried chilli flakes
A good sprinkle of smoked paprika
400ml vegetable stock
A little oil

Method:

Step 1

Heat the oil in a large pan

Step 2

Add the onions and sauté for about 5 minutes add in the garlic and cook for another 2 minutes

Step 3

Add the chilli , oregano, cinnamon , cumin and tomato purée cook off for a couple of minutes

Step 4

Add in the other veg and the tinned tomatoes cook for about 10 minutes

Step 5

Add stock and drained beans and cook for another 30 minutes

Step 6

Serve with rice .
