This soup can be portioned and extra can be frozen.
200g red lentils
1 tin of tomatoes
1 vegetable stock cube
1 litre of water
½ teaspoon of chili flakes (optional)
Little bit of cooking oil
Chop one onion and fry slowly in a little bit of oil. Add the lentils and stir. Add a tin of tomatoes and mix everything together. Mix the stock cube into the water and add to the lentil and tomato mixture. Add chili flakes and salt and pepper.
Cook for about 1 hour adding more water if needed.
Use a hand blender if you want the soup to be smooth.
